Ingredients

  • 16 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 3 tbsp All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 6 oz Crumbled blue cheese
  • 8 oz Shredded sharp white cheddar cheese
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 3 tbsp Fresh chives, finely chopped
  • 0.75 cup Panko breadcrumbs
  • 2 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Cook the mixture for 1–2 minutes, stirring constantly, until it is golden and bubbling.

Step 3

Gradually whisk in the milk and heavy cream, ensuring no lumps form. Continue to cook and stir the mixture over medium heat until it thickens, about 5–7 minutes.

Step 4

Add the crumbled blue cheese and shredded cheddar cheese to the sauce, stirring until they are fully melted and incorporated. Season the sauce with salt and ground black pepper to taste.

Step 5

Add the cooked macaroni to the cheese sauce and stir to coat the pasta evenly.

Step 6

Preheat the oven to 375°F (190°C). Transfer the macaroni and cheese mixture to a greased 9x13-inch baking dish.

Step 7

In a small bowl, combine the panko breadcrumbs with olive oil and mix until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.

Step 8

Bake the dish in the preheated oven for 15–20 minutes, or until the breadcrumbs are golden and the cheese is bubbling.

Step 9

Remove the dish from the oven and sprinkle the chopped chives over the top before serving.
