Ingredients

  • 4 pieces (6-8 oz each) Blue marlin steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, chopped
  • 2 teaspoons Capers (optional)

Directions

Step 1

Pat the blue marlin steaks dry with paper towels. Season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once the oil is shimmering, carefully place the blue marlin steaks into the pan.

Step 3

Sear the steaks for 3-4 minutes on one side without moving them to develop a golden-brown crust. Flip the steaks and cook for an additional 3-4 minutes on the other side, or until they reach an internal temperature of 135°F (57°C) for medium doneness. Remove the steaks from the skillet and set aside on a plate tented with foil.

Reduce the heat to medium. In the same skillet, add the butter and let it melt. Stir in the minced garlic and sauté for 1-2 minutes until fragrant.
