Ingredients

  • 4 pieces Blue eye cod fillets
  • 2 tablespoons Olive oil
  • 1 cup Coconut milk
  • 2 tablespoons Yellow curry paste
  • 0.5 cup Fish stock (or water)
  • 1 piece Red chili, finely sliced (optional, for heat)
  • 1 teaspoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Lime juice
  • 1 teaspoon Brown sugar
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 2 cups Steamed jasmine rice (to serve)

Directions

Step 1

Pat the blue eye cod fillets dry with paper towels and season both sides with a pinch of salt.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cod fillets and sear for 3-4 minutes per side or until golden brown and cooked through. Transfer the fillets to a plate and keep warm.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Stir in the grated ginger and minced garlic, cooking for 1 minute until fragrant.
