Ingredients

  • 60 grams All-purpose flour

  • 115 grams Unsalted butter, melted and cooled
  • 120 grams Granulated sugar
  • 2 Large eggs (room temperature)
  • 1 teaspoon Vanilla extract
  • 60 ml Whole milk
  • 15 grams Powdered sugar (optional, for dusting)

Directions

Step 1

In a medium bowl, whisk together the blue cornmeal, all-purpose flour, baking powder, and salt. Set aside.

In another bowl, whisk the granulated sugar and eggs until pale and frothy, about 2-3 minutes.

Step 3

Add the vanilla extract and milk to the egg mixture, and stir until combined.

Gently fold the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.
