Ingredients

  • 4 pieces (6 oz each) beef tenderloin steaks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic cloves, minced
  • 1 cup heavy cream
  • 3 ounces crumbled blue cheese
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season both sides of the tenderloin steaks with salt and black pepper.

Step 3

In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering.

Step 4

Sear the steaks for 2-3 minutes on each side until a golden crust forms.

Step 5

Transfer the skillet to the preheated oven and cook the steaks for an additional 5-7 minutes, or until they reach your desired level of doneness (125°F for medium-rare, 135°F for medium).

Step 6

Remove the skillet from the oven and transfer the steaks to a plate to rest, tented with foil.

Step 7

In the same skillet, add butter and minced garlic. Cook over medium heat for 1-2 minutes until fragrant.

Step 8

Pour in the heavy cream and stir to combine, scraping up any browned bits from the skillet.

Step 9

Add the crumbled blue cheese to the skillet and stir until the cheese is melted and the sauce is smooth, about 2-3 minutes.

Step 10

Remove the sauce from heat and stir in the chopped parsley.

Step 11

Serve the rested steaks topped with the blue cheese sauce. Garnish with additional parsley if desired.
