  • 4 pieces boneless, skinless chicken breasts
  • 120 grams blue cheese, crumbled
  • 60 grams cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.5 teaspoon paprika
  • 8 pieces toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

In a small bowl, mix together the blue cheese, cream cheese, fresh parsley, chives, garlic, salt (1/2 teaspoon), and black pepper (1/4 teaspoon) to create the filling.

Step 3

Lay each chicken breast flat on a cutting board and carefully slice a pocket horizontally into the thickest part of the breast without cutting all the way through.
