Ingredients

  • 4 large Flour tortillas
  • 100 grams Blue cheese
  • 100 grams Shredded mozzarella cheese
  • 1 medium Red onion
  • 2 tablespoons Olive oil
  • 1 medium Papaya
  • 1 small Red bell pepper
  • 2 tablespoons Cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter

Directions

Step 1

Prepare the papaya salsa: Peel and dice the papaya into small cubes. Finely dice the red bell pepper. Chop the cilantro.

In a medium bowl, combine the diced papaya, red bell pepper, chopped cilantro, lime juice, half the salt, and black pepper. Mix well and set aside to let the flavors meld.
