Ingredients

  • 125 ml Water
  • 60 g Unsalted butter
  • 0.5 tsp Salt
  • 75 g All-purpose flour
  • 2 pcs Large eggs
  • 60 g Blue cheese, crumbled
  • 0.25 tsp Freshly ground black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the water, butter, and salt. Heat over medium heat until the butter melts and the mixture begins to simmer.

Step 3

Reduce the heat to low and quickly stir in the flour using a wooden spoon. Stir vigorously until the mixture forms a smooth dough that pulls away from the sides of the pan, about 1-2 minutes.

Step 4

Transfer the dough to a mixing bowl and let it cool for 5 minutes.

Step 5

Crack one egg into the cooled dough and stir until fully incorporated. Repeat with the second egg. The dough should be smooth and slightly sticky.

Step 6

Fold in the crumbled blue cheese and black pepper until evenly distributed.

Step 7

Spoon or pipe tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake the gougères in the preheated oven for 20-25 minutes, or until puffed and golden brown.

Step 9

Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.
