Ingredients

  • 1 large round sourdough loaf
  • 8 oz Monterey Jack cheese
  • 0.5 cup unsalted butter
  • 3 cloves garlic cloves, minced
  • 2 stalks green onions, finely chopped
  • 1 tbsp poppy seeds

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the sourdough loaf on a cutting board. Using a sharp bread knife, make diagonal cuts about 1 inch apart across the surface of the loaf, being careful not to cut all the way through to the bottom. Turn the loaf 90 degrees and make another set of diagonal cuts to create a grid pattern. Set aside.

Step 3

Slice the Monterey Jack cheese into thin pieces that will fit into the cuts in the bread.

Step 4

Gently stuff the cheese slices into all the cuts in the bread, filling each space generously.

Step 5

In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and cook just until fragrant, about 1 minute.

Step 6

Remove the butter from heat, and stir in the chopped green onions and poppy seeds.

Step 7

Using a spoon or small brush, drizzle or brush the garlic butter mixture evenly over the top of the bread, making sure to get some into the cracks.

Step 8

Wrap the entire loaf in aluminum foil and place it on a baking sheet.

Step 9

Bake in the preheated oven for 15 minutes. Then, open the foil to expose the top of the bread and bake for an additional 10 minutes, or until the cheese is melted and the bread is golden and crispy.

Step 10

Carefully remove the bread from the oven, unwrap the foil, and place it on a serving platter. Serve warm, pulling apart pieces to enjoy.
