  • 3 Green onions, chopped (for garnish)
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sliced Andouille sausage and cook for 3-4 minutes, stirring occasionally, until browned. Remove the sausage and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil and cook the diced chicken thighs for 5-6 minutes, or until lightly browned. Remove and set aside with the sausage.

Add the diced onion, bell pepper, and celery to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables are softened.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the thinly sliced cabbage to the pot and cook for 5 minutes, stirring so it wilts slightly.

Step 7

Pour in the tomato juice, crushed tomatoes, and chicken stock. Stir to combine.

Step 8

Add the Worcestershire sauce, hot sauce, smoked paprika, cayenne pepper, dried thyme, salt, and black pepper. Stir well.

Step 9

Return the cooked sausage and chicken to the pot, stirring to combine.

Step 10

Bring the mixture to a simmer, cover, and cook for 20 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together.

Step 11

Stir in the cooked rice and let it warm through for 5 minutes.

Step 12

Taste and adjust seasoning if necessary.

Step 13

Serve hot, garnished with chopped green onions and parsley. Enjoy your Bloody Mary Style Cabbage Jambalaya!
