  • 3 Celery stalks, chopped into 1-inch pieces
  • 2 large Russet potatoes, peeled and cubed
  • 2 tbsp Tomato paste
  • 3 cups Bloody Mary mix (store-bought or homemade)
  • 2 cups Beef broth
  • 1 tbsp Horseradish
  • 2 tsp Worcestershire sauce
  • 1 tsp Hot sauce (e.g., Tabasco), optional
  • 2 Bay leaves
  • 3 Fresh thyme sprigs
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Parsley, chopped (for garnish)

Directions

Step 1

Season the beef cubes with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches, sear the beef cubes until browned on all sides, about 3-4 minutes per batch. Remove the beef and set aside.

Lower the heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion to the pot and sauté until softened, about 5 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Remove the bay leaves and thyme sprigs from the stew before serving.

Taste and adjust seasoning with additional salt and pepper if needed.
