Ingredients

  • 115 g Unsalted butter, melted
  • 200 g Light brown sugar, packed
  • 50 g Granulated sugar
  • 2 pieces Large eggs
  • 2 tsp Pure vanilla extract
  • 190 g All-purpose flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 150 g Chocolate chips (optional)
  • 100 g Chopped nuts (e.g., walnuts, pecans, optional)
  • 75 g Dried fruit (e.g., cranberries, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving a slight overhang for easy removal.

Step 2

In a large mixing bowl, whisk together the melted butter, light brown sugar, and granulated sugar until smooth and well-combined.

Step 3

Add the eggs and vanilla extract to the bowl and whisk until the mixture becomes thick and glossy.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually stir the dry ingredients into the wet ingredients using a spatula or wooden spoon. Mix just until combined; do not overmix.

Step 6

If desired, gently fold in your choice of mix-ins such as chocolate chips, chopped nuts, or dried fruit.

Step 7

Pour the batter into the prepared baking pan and spread it evenly using a spatula.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

Step 9

Remove the pan from the oven and allow the blondies to cool completely in the pan on a wire rack.

Step 10

Once cooled, lift the blondies out using the parchment paper overhang. Cut into 12 squares and serve.

Step 11

Store any leftovers in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
