Ingredients

  • 2 cans (14 oz each) Hearts of palm
  • 1 lb Large shrimp (peeled and deveined)
  • 3 tbsp Olive oil
  • 4 tbsp Lemon juice (freshly squeezed)
  • 2 cloves Garlic cloves (minced)
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Cucumber (sliced into thin half-moons)
  • 1 large Avocado (diced)
  • 0.25 cup Red onion (thinly sliced)
  • 2 tbsp Fresh parsley (chopped)
  • 2 tbsp Fresh cilantro (chopped)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika

Directions

Step 1

Drain and rinse the hearts of palm. Slice them into 1/2-inch rounds and place them in a large mixing bowl.

In a skillet, heat 1 tablespoon of olive oil over medium heat.
