  • 4 cloves garlic cloves (minced)
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions (chopped, for garnish)
  • 4 cups cooked white rice (optional, for serving)

Directions

Step 1

Rinse the black-eyed peas thoroughly under cold water and pick out any debris. Set aside.

Slice the Cajun sausage into 1/2-inch rounds.
