Ingredients

  • 4 pieces Trout fillets
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Butter
  • 1 tablespoon Olive oil
  • 4 pieces Lemon wedges
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Pat the trout fillets dry with paper towels to remove excess moisture.

Step 2

In a small bowl, combine the paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper to create the blackening spice mix.

Step 3

Generously season both sides of each trout fillet with the spice mix, ensuring an even coating.

Step 4

Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat until the butter is melted and begins to sizzle.

Step 5

Place the trout fillets into the skillet skin-side down (if applicable) and cook for 3-4 minutes without disturbing to allow a crispy crust to form.

Step 6

Carefully flip the fillets and cook for an additional 3-4 minutes, or until the fish is opaque and flakes easily with a fork.

Step 7

Remove the fillets from the skillet and set aside on a plate. Add the remaining 2 tablespoons of butter to the skillet and swirl until melted to create a flavorful pan sauce.

Step 8

Drizzle the melted butter over the cooked trout fillets and garnish with freshly chopped parsley.

Step 9

Serve immediately with lemon wedges on the side for squeezing over the fish.
