Ingredients

  • 4 pieces snapper fillets
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons dried oregano
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 4 pieces lemon wedges

Directions

Step 1

Pat the snapper fillets dry with a paper towel to remove excess moisture and set them aside.

Step 2

In a small bowl, combine the paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, black pepper, and salt. Mix well to create the blackening seasoning.

Step 3

Generously coat both sides of each snapper fillet with the seasoning mixture, pressing it into the fish to ensure an even coating.

Step 4

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot, about 2-3 minutes.

Step 5

Add the olive oil to the skillet, swirling it to coat the surface evenly.

Step 6

Carefully place the seasoned snapper fillets into the hot skillet. Cook for 3-4 minutes on the first side, without moving, until the spices form a dark, flavorful crust.

Step 7

Flip the fillets gently using a spatula and cook for another 3-4 minutes on the second side until the fish is cooked through and flakes easily with a fork.

Step 8

Remove the fillets from the skillet and transfer them to a serving platter.

Step 9

Serve immediately with lemon wedges on the side for squeezing over the fish.
