Ingredients

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.25 cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 0.75 cup heavy whipping cream
  • 2 cups blackberries
  • 0.25 cup granulated sugar
  • 1 tablespoon cornstarch
  • 0.25 cup water
  • 1 tablespoon lemon juice

Directions

Step 1

In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until the crumbs are evenly coated and press the mixture firmly into the bottom of a 9x9-inch pan to form the crust. Refrigerate while preparing the filling.

Step 2

In a large mixing bowl, use a hand mixer or stand mixer to beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and beat until well combined.

Step 3

In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fully incorporated.

Step 4

Spread the cream cheese mixture evenly over the prepared crust. Return the pan to the refrigerator to chill while making the blackberry topping.

Step 5

In a small saucepan over medium heat, combine the blackberries, 1/4 cup granulated sugar, cornstarch, water, and lemon juice. Stir constantly and cook until the mixture thickens and the blackberries break down slightly, about 5-7 minutes.

Step 6

Allow the blackberry mixture to cool to room temperature, then spread it evenly over the cream cheese layer in the pan.

Step 7

Refrigerate the dessert for at least 2 hours or until fully set.

Step 8

Slice into squares and serve. Enjoy your Blackberry Cream Cheese Dessert!
