  • 4 pieces chicken breasts
  • 1.5 cups blackberries
  • 2 tablespoons balsamic vinegar

  • 1 teaspoon salt

  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the chopped shallot. Sauté for 2-3 minutes until softened.
