Ingredients

  • 200 grams Black olives
  • 2 whole Red bell peppers
  • 2 whole Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 3 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Cut the red bell peppers in half, remove the seeds and stems, and place them cut-side down on a baking tray lined with parchment paper.

Step 3

Roast the bell peppers in the oven for 15 minutes or until the skin is charred and blistered.

Step 4

Remove the peppers from the oven and transfer them to a bowl. Cover with plastic wrap and let them steam for 10 minutes to loosen the skin.

Peel the skins off the peppers and add the flesh to a blender or food processor.

In the same blender, add the garlic cloves, ground cumin, ground coriander, paprika, cayenne pepper, olive oil, lemon juice, and salt.
