  • 1.25 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Whole milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Boiling water
  • 1 cup Cherry pie filling
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 0.25 cup Dark chocolate shavings

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt until well combined.

Step 3

Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth.

Step 4

Carefully stir in the boiling water; the batter will be thin. Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and let the cupcakes cool completely on a wire rack.
