Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 500 ml Heavy cream
  • 50 grams Granulated sugar
  • 300 grams Canned cherries in syrup
  • 2 tablespoons Kirsch (cherry brandy)
  • 150 grams Chocolate cake or brownie crumbs
  • 1 teaspoon Vanilla extract
  • 50 grams Dark chocolate shavings (for garnish)

Directions

Step 1

1. Chop the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

2. Heat 250 ml of the heavy cream in a saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2 minutes.

Step 3

3. Gently whisk the cream and chocolate until smooth and glossy. Let the chocolate ganache cool to room temperature.

Step 4

4. In a separate bowl, whip the remaining 250 ml of heavy cream, vanilla extract, and granulated sugar until stiff peaks form. Gently set aside in the refrigerator.

Step 5

5. Drain the canned cherries, reserving 2 tablespoons of the syrup. Mix the cherries with the Kirsch and reserved syrup in a small bowl.

Step 6

6. To assemble the spoon dessert, place a layer of chocolate cake or brownie crumbs at the bottom of serving glasses or small dessert bowls.

Step 7

7. Add a layer of the chocolate ganache over the crumbs, followed by a layer of the Kirsch-soaked cherries.

Step 8

8. Top the cherries with a generous dollop of whipped cream, smoothing the top with the back of a spoon.

Step 9

9. Repeat the layers if your serving container allows, finishing with the whipped cream on top.

Step 10

10. Garnish with dark chocolate shavings for an elegant touch.

Step 11

11. Refrigerate the desserts for at least 1 hour before serving to allow the flavors to meld. Serve chilled with a spoon.
