Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1.5 cups Granulated sugar
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 2 cups Pitted cherries (fresh or canned)
  • 0.5 cup Cherry juice or syrup
  • 2 cups Heavy whipping cream
  • 0.5 cup Powdered sugar
  • 1 cup Dark chocolate (for shavings)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients, mixing until smooth and well combined.

Step 4

Slowly stir in the boiling water, mixing until the batter is thin and smooth, but without overmixing.

Step 5

Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

Allow the cakes to cool in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.

Step 7

While the cakes are cooling, prepare the cherries by mixing them with the cherry juice or syrup in a small bowl. Set aside.

Step 8

In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Keep refrigerated until ready to use.

Step 9

Once the cakes are completely cool, level the tops with a serrated knife if necessary to create flat layers.

Step 10

Place the first cake layer on a serving plate and brush a few tablespoons of cherry syrup over the top.

Step 11

Spread a generous layer of whipped cream over the cake, followed by a layer of cherries.

Step 12

Place the second cake layer on top and repeat the process with the cherry syrup, whipped cream, and cherries.

Step 13

Frost the sides and top of the cake with the remaining whipped cream, smoothing it out with a spatula.

Step 14

Decorate the top and sides with chocolate shavings, using a peeler to create curls from the dark chocolate bar.

Step 15

Chill the cake in the refrigerator for at least 1 hour before serving to allow it to set.

Step 16

Slice and enjoy your Black Forest Cake with Cherries!
