  • 4 cups Chicken broth (low-sodium)
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon Smoked paprika
  • 1.5 cups White rice (uncooked)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley (fresh, chopped)
  • 2 stalks Green onions (sliced, for garnish)

Directions

Step 1

Rinse the black-eyed peas thoroughly under cold water and pick out any debris. Place them in a large bowl, cover with water, and soak for at least 8 hours or overnight. Drain and set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced andouille sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage from the pot and set aside.

In the same pot, add the diced onion, green bell pepper, and celery. Sauté for 5-6 minutes, or until softened. Add the minced garlic and cook for another 1 minute until fragrant.
