Ingredients

  • 15 oz (canned, drained and rinsed) Black-eyed peas
  • 1 cup (fresh, canned, or frozen) Corn kernels

  • 1 (seeded and minced) Jalapeño pepper
  • 0.25 cup (chopped) Cilantro
  • 2 tablespoons (freshly squeezed) Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Drain and rinse the black-eyed peas if using canned. Set aside to drip dry.

If using frozen corn kernels, thaw them completely. If using fresh corn, cook and let cool before adding to the salsa.

Dice the cherry tomatoes, red bell pepper, and small red onion into small, uniform pieces.
