Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups cocoa powder (dark or black cocoa recommended)
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs (large)
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Using a hand mixer or stand mixer, mix on medium speed until the batter is smooth and well combined.

Step 4

Reduce the mixing speed to low and carefully pour in the boiling water. Mix until the water is fully incorporated and the batter becomes thin.

Step 5

Divide the batter evenly between the prepared cake pans.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Avoid overbaking to keep the cake moist.

Step 7

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Step 8

Once the cakes are fully cooled, frost and decorate as desired. A rich chocolate ganache or cream cheese frosting pairs wonderfully with this cake.
