  • 2 lbs pork tenderloin
  • 1 cup black cherry preserves
  • 0.5 cup dry red wine
  • 2 tbsp balsamic vinegar

  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp unsalted butter
  • 1 yellow onion, finely diced
  • 0.5 cup chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix together the salt, black pepper, and fresh rosemary. Rub the mixture evenly over both pork tenderloins.

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloins on all sides until golden brown, about 3-4 minutes per side. Remove the pork from the pan and set it aside.

In the same skillet, reduce the heat to medium and add the unsalted butter. Once melted, add the diced yellow onion and sauté for 3-4 minutes until softened.
