Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium, finely chopped shallot
  • 2 cloves, minced garlic
  • 0.5 cup black cherry preserves
  • 2 tablespoons balsamic vinegar
  • 0.25 cup chicken broth
  • 1 teaspoon, chopped fresh thyme
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Directions

Step 1

Season the pork chops on both sides with salt and black pepper. Set aside.

Step 2

Heat a large skillet over medium-high heat. Add olive oil and let it heat until shimmering.

Step 3

Sear the pork chops for 3-4 minutes on each side, until they are golden brown and cooked to an internal temperature of 145°F (63°C). Remove the pork chops from the skillet and set them aside to rest.

Step 4

Reduce the heat to medium and add the unsalted butter to the same skillet. Once melted, add the finely chopped shallot. Sauté for 2-3 minutes until softened.

Step 5

Add the minced garlic to the skillet and cook for an additional 30 seconds, stirring frequently to avoid burning.

Step 6

Stir in the black cherry preserves, balsamic vinegar, chicken broth, and fresh thyme. Bring the mixture to a simmer, stirring occasionally.

Step 7

In a small bowl, combine the cornstarch and water to create a slurry. Once the black cherry mixture is simmering, stir in the slurry to thicken the sauce. Cook for 1-2 minutes until the glaze is glossy and coats the back of a spoon.

Step 8

Return the pork chops to the skillet with the glaze. Spoon the black cherry glaze over the pork chops and cook for an additional 2-3 minutes to heat through and coat the chops evenly.

Step 9

Remove from heat and serve immediately, garnished with additional thyme if desired. Pair with your favorite sides, such as roasted vegetables or mashed potatoes.
