  • 1 pound dried black beans
  • 12 ounces smoked sausage
  • 1.5 pounds chicken thighs, boneless and skinless

  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 4 cups chicken broth
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.25 teaspoon cayenne pepper (optional)
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Rinse and sort the dried black beans, discarding any debris or damaged beans. Place the beans in a large bowl, cover with water, and soak for at least 6-8 hours or overnight. Drain and rinse before cooking.

Step 2

Slice the smoked sausage into 1/4-inch thick rounds and cut the chicken thighs into bite-sized pieces.

Step 3

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the smoked sausage and cook until browned, about 4-5 minutes. Remove the sausage from the pot and set aside.

Step 4

In the same pot, add the chicken thighs and sear until golden brown on all sides, about 5-6 minutes. Remove the chicken and set aside with the sausage.

Return the sausage and chicken to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer gently for about 1.5 to 2 hours, stirring occasionally, until the beans are tender and the flavors have melded together.

Taste and adjust seasoning as needed. If the mixture is too thick, add a splash of chicken broth or water to reach your desired consistency.

Remove and discard the bay leaves. Garnish the dish with freshly chopped parsley.
