  • 2 peppers chipotle peppers in adobo sauce, chopped
  • 2 tablespoons adobo sauce (from the chipotle can)
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional garnish)
  • 4 wedges lime wedges (optional, for serving)

Directions

Step 1

Rinse the dried black beans under cold water and pick through to remove any debris.

Step 2

In a large pot, combine the rinsed beans and 6 cups of water. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about 60-75 minutes, or until the beans are tender. Drain and set aside.

Step 3

In a large skillet or Dutch oven, heat the olive oil over medium heat.

Step 4

Add the chopped onion and sauté for 5-7 minutes until softened and translucent.

Step 5

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 6

Add the chopped chipotle peppers, adobo sauce, cumin powder, and oregano. Cook for 1-2 minutes to bloom the spices and incorporate the flavors.

Step 7

Pour in the vegetable broth and stir well. Bring the mixture to a simmer.

Step 8

Add the cooked black beans to the skillet, stirring gently to combine. Season with salt and pepper.

Step 9

Reduce the heat to low and simmer uncovered for 15-20 minutes, stirring occasionally, until the sauce thickens and coats the beans.

Step 10

Taste and adjust seasoning, adding more salt or adobo sauce if needed for extra flavor.

Step 11

Remove from heat. Garnish with fresh cilantro, if desired, and serve with lime wedges on the side.
