Ingredients

  • 8 oz Rotini pasta (or any short pasta)
  • 15 oz Black beans (rinsed and drained)

  • 3 tbsp Fresh lime juice
  • 3 tbsp Olive oil
  • 1 tbsp Honey or maple syrup
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool the pasta and stop the cooking. Set aside.
