  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 1 juiced lime
  • 2 tablespoons, chopped fresh cilantro (optional, for garnish)
  • 1 sliced avocado (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional minute, until fragrant.

Add the diced sweet potatoes to the pot, stirring to coat them with the oil and onion mixture.
