  • 3 15-ounce cans black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 15-ounce can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)
  • 4 lime wedges (optional, for serving)

Directions

Step 1

In a large soup pot or Dutch oven, heat olive oil over medium heat.

Add the sliced chorizo and cook, stirring occasionally, for 5-7 minutes until browned and fragrant. Remove with a slotted spoon and set aside.
