Ingredients

  • 2 tablespoons olive oil
  • 12 ounces smoked spicy sausage

  • 15 ounces (canned, drained and rinsed) black beans
  • 14 ounces (canned) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups cooked white rice
  • 1.5 cups shredded sharp cheddar cheese
  • 2 stalks (sliced thinly) green onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat.

Step 3

Slice the smoked spicy sausage into 1/4-inch rounds and add them to the skillet. Cook for 5 minutes, stirring occasionally, until nicely browned. Remove sausage and set aside.

In the same skillet, add the diced yellow onion and red bell pepper. Sauté for 4-5 minutes until softened.
