Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 cup black beans (cooked or canned, rinsed and drained)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 small red onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 tablespoon fresh cilantro (chopped)
  • 1 teaspoon cumin powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear.

Step 2

In a medium saucepan, combine the rice and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for 15-18 minutes, or until the water is fully absorbed. Remove from heat and allow it to rest covered for 5 minutes. Fluff with a fork.
