Ingredients

  • 1 can (15 ounces) Black beans
  • 4 ounces Goat cheese
  • 4 Tortillas (flour or corn)
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 2 tablespoons (chopped) Fresh cilantro
  • 1 Jalapeño (optional, finely diced)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup (for serving) Salsa
  • 0.5 cup (for serving) Sour cream

Directions

Step 1

Drain and rinse the canned black beans, then transfer them to a bowl.

Step 2

Mash the black beans lightly with a fork, leaving some beans whole for texture.

Step 3

Add the cumin, chili powder, salt, black pepper, chopped cilantro, and diced jalapeño (if using) to the black beans. Stir to combine.

Step 4

Spread about 2 tablespoons of goat cheese onto one half of each tortilla.

Step 5

On top of the goat cheese, add a quarter of the black bean mixture and sprinkle with 1/4 cup of shredded cheddar cheese.

Step 6

Fold each tortilla in half to enclose the filling, pressing gently to seal.

Step 7

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place two quesadillas in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy. Repeat with the remaining olive oil and quesadillas.

Step 8

Slice each quesadilla into wedges and serve hot with salsa and sour cream on the side.
