Ingredients

  • 12 pieces Lasagna noodles
  • 2 cups Black beans
  • 1 cup Low-fat ricotta cheese

  • 2 cups Fresh spinach
  • 2 teaspoons Minced garlic
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Cook lasagna noodles according to package directions until al dente. Drain, rinse with cold water, and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool.

In a large mixing bowl, combine black beans, cooked spinach, ricotta cheese, 0.5 cups of shredded mozzarella, dried basil, dried oregano, salt, and black pepper. Mix well to form the filling.
