Ingredients

  • 1 cup Canned black beans
  • 1 cup Canned or frozen corn kernels
  • 0.75 cup Shredded cheddar cheese
  • 0.5 cup All-purpose flour
  • 0.25 cup Milk
  • 1 large Egg
  • 2 tablespoons Green onion (finely sliced)
  • 2 tablespoons Cilantro (chopped)
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Vegetable oil (for frying)
  • 0.5 cup Sour cream (for serving, optional)
  • 4 pieces Lime wedges (for serving, optional)

Directions

Step 1

In a large mixing bowl, mash the black beans lightly with the back of a fork or a potato masher until they are partially broken down but still have some texture.

Step 2

Add the corn, shredded cheddar cheese, flour, milk, egg, green onion, cilantro, cumin, chili powder, salt, and black pepper to the bowl. Stir everything together until the mixture forms a cohesive batter.

Step 3

Heat a large non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.

Step 4

Using a spoon or small scoop, drop about 2 tablespoons of batter per fritter into the skillet, flattening them slightly with the back of the spoon to form a patty shape.

Step 5

Cook the fritters for 2-3 minutes on each side, or until they are golden brown and cooked through. Be careful not to overcrowd the pan; cook them in batches if necessary.

Step 6

Transfer the cooked fritters to a paper towel-lined plate to remove excess oil.

Step 7

Repeat the process with the rest of the batter, adding more oil to the skillet as needed.

Step 8

Serve the fritters warm with a dollop of sour cream and a squeeze of lime, if desired. Enjoy!
