  • 1 medium red bell pepper, diced

  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • 14.5 ounces canned diced tomatoes
  • 30 ounces canned black beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup corn kernels, fresh or frozen
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 medium avocado, sliced (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and red bell pepper to the pot. Cook for 5-6 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic, cumin, smoked paprika, and chili powder. Cook for 1 minute until fragrant.

Step 4

Add the canned diced tomatoes (with juice), black beans, vegetable broth, and corn kernels to the pot. Stir well to combine.
