  • 1 15-ounce can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon maple syrup
  • 1 large, sliced (for garnish, optional) avocado
  • 3 tablespoons, chopped (for garnish, optional) fresh cilantro

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place the sweet potatoes on the prepared baking sheet.
