Ingredients

  • 1.5 cups Black beans (cooked or canned, rinsed and drained)
  • 2 Large eggs
  • 3 tablespoons Coconut oil (melted)
  • 0.25 cup Unsweetened cocoa powder
  • 0.33 cup Rolled oats (certified gluten-free)
  • 0.75 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Dark chocolate chips (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.

Step 2

Place the black beans, eggs, coconut oil, cocoa powder, oats, honey (or maple syrup), vanilla extract, baking powder, and salt into a blender or food processor.

Step 3

Blend until the mixture is completely smooth, scraping down the sides as needed. The batter will be thick.
