Ingredients

  • 1 cup Black beans (canned, rinsed, and drained)
  • 1 bunch Asparagus
  • 1 cup Cherry tomatoes (halved)
  • 1 small Red onion (finely chopped)
  • 2 tablespoons Fresh parsley (chopped)
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Feta cheese (optional, crumbled)

Directions

Step 1

Wash the asparagus and trim the woody ends.

Step 2

Cut the asparagus into 2-inch pieces.

Step 3

Bring a pot of salted water to a boil and blanch the asparagus for 2-3 minutes, just until tender and bright green.

Drain the asparagus and immediately transfer it to a bowl of ice water to stop the cooking process. Once cooled, drain and pat dry.
