Ingredients

  • 15 oz canned black beans
  • 2 medium roasted red peppers
  • 2 cloves garlic

  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro
  • 3 tbsp water

Directions

Step 1

Drain and rinse the canned black beans thoroughly under cold water.

Step 2

If using jarred roasted red peppers, drain them well. If roasting your own, char the red peppers over an open flame or under a broiler until blackened all over. Place them in a bowl, cover with plastic wrap, and let them steam for 10 minutes before peeling off the charred skin and removing seeds.

Step 3

In a food processor, combine the black beans, roasted red peppers, garlic cloves, olive oil, lime juice, ground cumin, smoked paprika, salt, and black pepper.
