Ingredients

  • 4 pieces Flour tortillas
  • 1 can (15 oz) Black beans, drained and rinsed
  • 4 ounces Goat cheese, crumbled
  • 1 cup Cheddar cheese, shredded
  • 0.25 cup Red onion, finely diced
  • 0.25 cup Fresh cilantro, chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium bowl, combine the black beans, red onion, cilantro, cumin, chili powder, garlic powder, salt, and pepper. Mash the mixture lightly with a fork, leaving some beans whole for texture.

Step 2

Lay the tortillas flat on a clean surface. Spread 1 ounce of goat cheese evenly over half of each tortilla.

Step 3

Spoon the black bean mixture over the goat cheese, dividing it equally among the tortillas.

Step 4

Sprinkle shredded cheddar cheese over the black bean mixture, then fold each tortilla in half to form a semicircle.

Step 5

Heat a large skillet over medium heat and add 1/2 tablespoon of olive oil.

Step 6

Place one or two quesadillas (depending on skillet size) in the pan and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more olive oil if needed.

Step 7

Remove the quesadillas from the skillet, slice them into wedges, and serve hot with your favorite salsa, guacamole, or sour cream.
