  • 1 cup bulgur wheat
  • 1 cup black beans, cooked and rinsed

  • 0.25 cup fresh parsley, chopped
  • 0.25 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice, freshly squeezed
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium saucepan, bring 2 cups of water to a boil. Stir in 1 cup of bulgur wheat, cover, and reduce the heat to low. Cook for 12-15 minutes or until the bulgur absorbs all the water and becomes tender.
