  • 2 tablespoons Fresh lime juice
  • 4 pieces Flour tortillas (10-inch)
  • 1 cup Shredded cheddar cheese
  • 0.25 cup Chopped fresh cilantro (optional)
  • 0.5 cup Salsa (optional, for serving)
  • 0.5 cup Sour cream or Greek yogurt (optional, for serving)

Directions

Step 1

In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

While the rice is cooking, heat a large skillet over medium heat and add the olive oil.
