  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Cilantro, chopped
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 teaspoons Olive oil
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Salsa (optional, for serving)

Directions

Step 1

In a medium bowl, mash the ripe avocado with a fork until slightly chunky. Stir in lime juice, cilantro, ground cumin, garlic powder, salt, and black pepper until well combined.

Lay out two flour tortillas on a clean surface. Spread the mashed avocado mixture evenly over both tortillas.

Top the avocado layer with half a cup of shredded cheddar cheese on each tortilla, followed by half a cup of black beans evenly distributed.
