Ingredients

  • 1 head (medium-sized) green cabbage
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large (diced) onion
  • 3 minced garlic cloves
  • 2 cups cooked white rice
  • 28 ounces (1 large can) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of water to a boil. Core the cabbage head and carefully peel the leaves. Blanch the cabbage leaves in boiling water for 2-3 minutes until softened. Drain and set aside to cool.

Step 3

In a large skillet, heat the olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute or until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

Step 5

Stir in the crushed tomatoes, tomato paste, beef broth, paprika, oregano, salt, and pepper. Simmer the mixture for 5 minutes to combine the flavors.

Step 6

In a mixing bowl, combine the cooked rice with the beef and tomato mixture. Stir well to create the filling.

Step 7

Coat a 9x13-inch casserole dish with non-stick cooking spray. Spread a thin layer of the beef mixture on the bottom of the dish.

Step 8

Layer half of the cabbage leaves over the beef mixture. Spread half of the remaining beef and rice mixture over the cabbage. Repeat with another layer of cabbage leaves followed by the rest of the beef mixture.

Step 9

Cover the casserole dish with foil and bake in the preheated oven for 40 minutes.

Step 10

Remove the foil and sprinkle the top of the casserole with mozzarella and cheddar cheese. Return the dish to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Step 11

Let the casserole rest for 5-10 minutes before serving. Enjoy your hearty and comforting Bkwitch's Cabbage Roll Casserole!
