Ingredients

  • 225 grams bittersweet chocolate (70% cocoa or higher)
  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 5 units large eggs
  • 1 teaspoon pure vanilla extract
  • 0.25 teaspoon salt
  • 2 tablespoons unsweetened cocoa powder (for dusting, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2

Chop the bittersweet chocolate into small pieces and place it in a heatproof bowl along with the unsalted butter. Melt together over a double boiler or microwave in 30-second intervals, stirring until smooth. Let cool slightly.

Step 3

Whisk the granulated sugar into the melted chocolate mixture until well incorporated.

Step 4

Add the eggs one at a time, whisking thoroughly after each addition. The mixture should become smooth and glossy.

Step 5

Stir in the vanilla extract and salt until combined.

Step 6

Pour the batter into the prepared cake pan, smoothing the surface with a spatula.

Step 7

Bake in the preheated oven for 22 to 25 minutes, or until the center is just set but still slightly soft. Do not overbake.

Step 8

Remove the cake from the oven and let it cool in the pan for 10 minutes, then carefully turn it out onto a wire rack to cool completely.

Step 9

Once cooled, optionally dust the top of the cake with unsweetened cocoa powder before serving.

Step 10

Slice and serve on its own or with a dollop of whipped cream or fresh berries for an elegant presentation.
