Ingredients

  • 12 pieces lasagna noodles
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic cloves, minced
  • 2 medium zucchini, diced
  • 2 medium carrot, shredded
  • 4 cups baby spinach
  • 4 cups marinara sauce
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Sauté the diced onion and minced garlic for 2-3 minutes until fragrant.

Add the diced zucchini and shredded carrot to the skillet. Cook for another 5-7 minutes until the vegetables soften.

Stir in the baby spinach and cook for an additional 2 minutes until wilted. Remove the skillet from heat and set aside.

Repeat the layering process two more times: noodles, ricotta mixture, vegetables, marinara sauce, and mozzarella cheese.

Top the final layer with the remaining lasagna noodles, 1/2 cup of marinara sauce, and the remaining shredded mozzarella cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for another 15-20 minutes, or until the cheese is golden and bubbly.

Allow the lasagna to cool for 10 minutes before slicing and serving.
