Ingredients

  • 2 sheets Refrigerated pie crusts
  • 2 medium (peeled, cored, and finely diced) Apple
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Cornstarch
  • 1 tablespoon Unsalted butter
  • 1 large (beaten) Egg
  • 1 tablespoon Coarse sugar (optional for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Unroll the refrigerated pie crusts and use a 2.5-inch round cookie cutter to cut out as many circles as possible. Gather scraps, re-roll them, and cut out more circles. You should end up with about 48 circles.

Step 3

In a mixing bowl, combine the diced apples, granulated sugar, brown sugar, ground cinnamon, and cornstarch. Mix until the apples are evenly coated.

Step 4

Melt the unsalted butter in a skillet over medium heat. Add the apple mixture and cook for 5–6 minutes until the apples are just softened and the mixture thickens slightly. Remove from heat and let it cool for a few minutes.

Place about 1 teaspoon of the apple filling onto the center of half the pie crust circles.

Brush the edges of the filled circles lightly with water, then cover each with another pie crust circle. Press the edges together to seal, and crimp with a fork for a decorative edge.
